Hooked On Caprese Salad.....

Hi Girlies!

I've known for a lonnnnng time that Bloggie Girlies are the very best chickies evah....


And, once again....you've warmed my heart, made me cry and uplifted me.


In my last post I wrote about my little grandson (you know, the light of my life and joy of my heart???) and his trouble at school, subsequent school change and wonderful outcome.


Your positive words did so much for me and for my darling daughter.....ya'all made her cry too.


Thank you so much from this grandma's heart to your caring hearts.


I love you to bits.


Now, about this Caprese salad business. I know many/most/all of you have had this before, but I've decided it's now my all time favorite lunch. It's just delish!


Quick and easy too.


Fresh Mozzarella Cheese
Tomatoes
Fresh Basil
Salt, Pepper and Olive Oil or Italian Dressing (I prefer the dressing myself)



Oh how this non-cooking girlie loves herself a nice, easy dish with very few ingredients.

This is what I'll be having for lunch AGAIN today.

My darling hubbs bought me a basil plant at Trader Joe's (and some fresh mozzarella....he knows what the little Missus loves)..... Thanks Muffin!


Ok....back to the cleaning.


So much to do today.

  1. I adore caprese salad. Sometimes as an appetizer in the summer, we eat the mozzerella and basil on slices of juicy tomatoes. Have a lot of napkins ready...better yet, a bib!! ;-D

  4. I have planted my basil...two kinds this year. One is called a boxwood basil and it has tiny leaves. I will use that one for sprinkling. The other plant is the one I will use for making pesto.....yum!...can't wait. xo

  6. Hi Spencer....just stopping by to wish you a wonderful Mother's Day....and I also love Caprese salad...I've got to have it with some crusty bread to dunk in the balsamic vinegar and oil dressing...and it has to be fresh mozarrella...Oh I'm getting hungry!!
